In a medium-sized bowl, add softened butter and granulated sugar. Mix until pale and smooth.

Add in light brown sugar and repeat the last step.

Add in good quality vanilla extract and combine everything.

To the same bowl, add a room-temperature medium-sized egg and mix it really well.

Add in all the dry ingredients, which include plain flour, cocoa powder and baking soda. Mix this well and your cookie dough will reach a coarse consistency. Try not to overwork the mixture.

Add the chopped chocolate chunks to the mixture and give it a final mix.

Once the cookie dough is ready, let it rest in the refrigerator for 15-20 minutes.

While the cookie dough is resting, preheat your oven to 180 degrees Celsius.

Once rested, use a medium-sized ice cream scoop to out even-sized portions of cookie dough and place them on a baking sheet on your baking tray.

Bake the cookies at 170°C for 12-15 mins and enjoy!
